Meet Nicole

I’m a Registered Dietitian Nutritionist (since 2008) and Certified Intuitive Eating Counselor with a specialty in eating‑disorder support. With nearly twenty years of experience in both the US and the UK, I combine clinical expertise with a deep appreciation for the real‑life complexities that shape how we eat, move, and care for ourselves.

I grew up as an athlete and still love running today (albeit slowly). Movement has always been part of my life, but so has the understanding that bodies change, seasons shift, and perfection isn’t the goal. I don’t eat “perfectly,” and I don’t expect my clients to either. I’m an intuitive eater who enjoys food from many cultures, shaped by my own multicultural family and the places I’ve lived and traveled. I’ve taken chef‑led cooking classes in Los Angeles and even in Vietnam, and I love exploring how culture, family traditions, early childhood messaging, health anxiety, and body image all influence our relationship with food. The image of “perfect” that’s often portrayed in media is not only unrealistic but can create guilt and shame around eating and our bodies — and that’s no way to live.

My work is grounded in partnership. I support clients in finding their own version of a happy place with food — one that includes nourishment, satisfaction, flexibility, and joy. I believe food is deeply personal, and healing happens when we honor the full story behind it.

Alongside my nutrition work, I’m trained and certified through STOTT Merrithew, an internationally recognized Pilates education program. I’ve also completed a farm‑camp focused on sourdough and regenerative farming. I offer private sourdough lessons and in‑home Pilates classes, available as one‑on‑one sessions or small group workshops. When I’m not counseling, you’ll often find me cooking, gardening, moving my body, or baking cookies and sourdough with my two little boys.

I am currently a Certified Dietitian in Washington State and also work with clients in California and beyond.
